Lechon Belly with Honey‑Calamansi Gastrique and Green Papaya Slaw

Crisp sous‑vide pork belly slices on coconut‑calamansi gastrique with green papaya slaw, garnished with cilantro and mint.

Lechon Belly with Honey‑Calamansi Gastrique and Green Papaya Slaw

Filipino cuisine blends Malay, Chinese and Spanish roots into vibrant, contrasting flavors. It pairs tangy vinegar or calamansi acidity with salty soy or fish sauce, bright herbs and subtle sweetness. Regional specialties range from hearty stews to crisp street snacks. Techniques honor balance: quick pickles counter rich meats, slow braises deepen umami, fresh fruits lift heavy flavors. This recipe reimagines traditional lechon kawali by using precise sous‑vide for tender pork belly, a honey‑calamansi gastrique for zing and a crunchy green papaya slaw for brightness. It honors Filipino heritage while introducing modern infusion and plating techniques for an unforgettable dinner.

First bite delivers rich, pork umami under crisp crackle. Then honey‑calamansi gastrique hits with sweet‑tart brightness. Mid‑palate notes of garlic and ginger underpin the slaw’s fresh snap. Finish is clean, acidic and herbal from cilantro and mint. Texture shifts from crunchy pork skin to silky belly meat and crisp slaw. Overall the dish feels bold and balanced—savory, sweet, sour and fresh in harmony.

Ingredients (Serves 4 GF)

• 1.2 kg pork belly, skin scored, at room temperature
• 12 g kosher salt
• 5 g black pepper, freshly ground
• 1 tbsp garlic powder
• 1 tbsp ginger powder
• Vacuum sealer and bags
• 200 ml honey
• 80 ml calamansi juice (or lime)
• 2 garlic cloves, crushed
• 10 g ginger, sliced
• 1 tbsp neutral oil
• 300 g green papaya, julienned
• 1 medium carrot, julienned
• 2 tbsp fish sauce
• 1 tbsp honey
• 1 lime, juiced
• 1 red chili, thinly sliced
• Fresh cilantro and mint leaves, for garnish

Step-by-Step Instructions

Step 1 – Mise en Place (20 min)
Gather vacuum sealer, sous‑vide bath, skillet, mandoline, bowls. Pre‑measure spices, juice calamansi, julienne papaya and carrot. Organization prevents delays.

Step 2 – Season and Seal Pork (10 min)
Pat pork dry. Rub salt, pepper, garlic and ginger powder evenly. Vacuum‑seal in bag. If bag won’t seal, fold edge to release air manually before sealing.

Step 3 – Sous‑Vide Cook (24 h)
Preheat bath to 68 °C. Submerge pork, cook 24 hours. This fully renders fat and tenderizes meat. If bag floats, weight it with a spoon.

Step 4 – Prepare Gastrique (10 min)
In small pot, combine honey, calamansi juice, garlic and ginger. Bring to simmer over medium. Reduce until syrupy (5 min). Strain into bowl, discard solids. Keep warm.

Step 5 – Make Slaw (10 min)
In large bowl, toss papaya, carrot, fish sauce, honey, lime juice and chili. Adjust seasoning. Let rest 5 min to meld flavors.

Step 6 – Crisp and Slice Pork (10 min)
Pat pork dry. In hot skillet, pour oil, sear skin side until crackled (4 min). Flip to crisp undersides (2 min). Rest 5 min. Slice into 10 mm pieces.

Step 7 – Plate and Garnish (5 min)
Spoon gastrique smear on plates. Fan five pork slices atop smear. Mound slaw beside. Drizzle extra gastrique. Scatter cilantro and mint.

Scalability & Flexibility

Add 2 h sous‑vide per extra 500 g pork. Slaw and gastrique can be made a day ahead. Substitute honey with agave.

Cooking Methods

• Precision sous‑vide for even doneness
• High‑heat skillet sear for traditional crackle
• Quick gastrique reduction for balanced sweetness and acidity

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
