Tandoori Paneer with Smoky Red Lentil Purée, Sweet Potato Mash and Saffron‑Ginger Jus

Charred vacuum‑marinated tandoori paneer cubes on sweet potato purée and smoky lentil purée, drizzled with saffron‑ginger jus and topped with chickpea crumble and cilantro.

Tandoori Paneer with Smoky Red Lentil Purée, Sweet Potato Mash and Saffron‑Ginger Jus

Indian cuisine layers warming spices, tangy acids and comforting richness. It revels in spice blends like garam masala and chaat masala, tempered by cooling yogurt or coconut. Regional dishes range from fiery curries to subtle dals. This recipe honors that depth while introducing vacuum‑marinated infusion and smoke finishing for a fresh twist on vegetarian tradition.

Bold spice notes from tandoori masala hit first, balanced by sweet‑earthy sweet potato purée. Mid‑bite brings smoky lentil umami. A bright saffron‑ginger jus adds citrusy warmth. Roasted chickpea crumble delivers a nutty crunch. Finish feels clean, with cilantro freshness lifting lingering heat. Overall it’s robust, layered and perfectly balanced.

Ingredients (Serves 4 GF)

• 500 g paneer, cut into 20 mm cubes, at room temperature
• 150 g Greek yogurt (full‑fat)
• 15 g tandoori masala spice blend
• 5 g kosher salt
• 2 g garlic powder
• 2 g ginger powder
• Vacuum sealer and bags
• 300 g red lentils, rinsed
• 1 L water
• 2 bay leaves
• 1 tsp smoked paprika
• 400 g sweet potato, peeled and diced
• 30 g unsalted butter
• 100 ml milk (or coconut milk for dairy‑free)
• 0.1 g saffron threads, soaked in 2 tbsp hot water
• 20 g fresh ginger, minced
• 2 cloves garlic, minced
• 1 tsp sugar
• 1 tbsp lemon juice
• 50 ml water
• 100 g chickpeas, cooked and dried
• 5 ml neutral oil (grapeseed or canola)
• Fresh cilantro leaves, for garnish
• Micro coriander, for garnish

Step‑by‑-Step Instructions

Step 1 – Mise en Place (20 min)
Gather vacuum sealer, sous‑vide bath or warm water bath, heavy pot, skillet, blender. Pre‑measure spices, rinse lentils, dice sweet potato, cube paneer. Good organization prevents missed steps.

Step 2 – Vacuum Marinade Paneer (5 min + 2 h)
In a bowl, whisk yogurt, tandoori masala, salt, garlic and ginger powder. Toss paneer cubes to coat evenly. Seal in vacuum bag and chill for 2 hours. If you lack a vacuum sealer, press bag to remove air before sealing.

Step 3 – Cook Lentil Purée (30 min)
In pot, combine lentils, water and bay leaves. Bring to boil, reduce to simmer. Cook until soft (20 min). Stir in smoked paprika, salt to taste. Blend to smooth consistency. Keep warm.

Step 4 – Sweet Potato Mash (20 min)
Boil sweet potato until fork‑tender (15 min). Drain. Mash with butter and milk until silky. Season with salt. If too thick, add splash of milk.

Step 5 – Roast Chickpea Crumble (15 min)
Toss dried chickpeas with oil and pinch of salt. Roast in skillet over medium heat until golden and crisp (8 min). Watch closely to avoid burning.

Step 6 – Prepare Saffron‑Ginger Jus (10 min)
In small saucepan, heat oil over low. Sauté garlic and ginger until fragrant (1 min). Add saffron water, sugar, lemon juice and water. Simmer until reduced by one‑third (4 min). Strain if desired.

Step 7 – Finish Paneer (10 min)
Preheat skillet or grill pan over medium‑high. Pat paneer dry. Sear cubes until char marks appear on all sides (2 min per side). Rest 2 min.

Step 8 – Plate and Garnish (5 min)
Spoon sweet potato mash into center of each plate. Add a quenelle of lentil purée beside it. Arrange five paneer cubes atop mash. Drizzle jus around. Scatter chickpea crumble. Garnish with cilantro and micro coriander.

Total Time: 3 h 15 min (active: 1 h 35 min)

Scalability & Flexibility

Marinade time increases by 30 min per extra 200 g paneer. Lentil purée can be made 1 day ahead. Swap sweet potato for butternut squash. Use coconut milk to make dairy‑free.

Cooking Methods

• Vacuum marinade for deep spice infusion
• Smoke infusion option: smoke sealed paneer bag for 15 min at 60 °C before searing
• Blend‑to‑smooth purée ensuring velvety texture
• Quick skillet roast for crisp exterior and tender inside

Optional Spice Blend

Mix equal parts ground coriander, cumin and fennel seed (2 g each) to sprinkle on paneer before sear.

Flavor Boosters

Add 1 g dried mango powder (amchur) to saffron‑ginger jus for extra tang.

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
