Steam-Baked Cardamom-Saffron Semolina Crème Brûlée with Pistachio Brittle and Rose-Saffron Syrup
Indian desserts marry warming spices and floral notes with creamy textures. They balance cardamom’s sweet-herbal heat, saffron’s honeyed nuance and rosewater’s delicate aroma. This dish fuses steam-baked semolina custard with a crisp brûlée crust, crunchy pistachio brittle and rose-saffron syrup for a modern take on kheer.
Dominant sweet-milky semolina underlined by cardamom warmth and saffron depth. Mid-bite brings a bitter-sweet crunch from caramelized sugar. Finish lifts with floral rosewater and nutty pistachio echoes. Texture shifts from silky custard to crackling crust and brittle shards. Overall it feels comforting, layered and refined.
Ingredients (Serves 4 GF)
• 200 g fine semolina
• 600 ml whole milk, cold
• 200 ml heavy cream, cold
• 4 egg yolks
• 100 g granulated sugar
• 6 green cardamom pods, lightly crushed
• Pinch (0.05 g) saffron threads, soaked in 2 tbsp hot water
• 1 tsp rosewater
• 30 g pistachios, shelled and lightly toasted
• 50 g sugar (for brittle)
• 2 tbsp water (for syrup)
• 1 tbsp rosewater (for syrup)
• Extra 30 g granulated sugar (for brûlée crust)
Step-by-Step Instructions
Step 1 – Steam Semolina Base (20 min)
Bring milk, cream, crushed cardamom and soaked saffron (with water) to a gentle simmer in a heavy pot. Gradually whisk in semolina. Simmer over low heat, stirring until thick and smooth (5 min). Stir in 50 g sugar and rosewater. Remove cardamom pods. Let cool 5 min off heat.
Step 2 – Temper Yolks and Bake (50 min)
Beat egg yolks in a bowl. Add a ladle of warm semolina mixture to yolks, whisk to combine. Return yolk mix to pot, whisk gently. Divide custard among four 125 ml ramekins. Place ramekins in a deep baking dish. Pour hot water into dish to reach halfway up ramekins. Steam in oven at 160 °C for 30 min until custard just sets (it should still jiggle slightly). Remove and cool 15 min.
Step 3 – Make Pistachio Brittle (15 min)
Line a baking sheet with parchment. In a small saucepan, combine 50 g sugar and 1 tbsp water. Heat over medium without stirring until sugar melts and turns amber (5 min). Remove from heat, stir in pistachios. Pour onto sheet and spread thin. Let cool completely (5 min), then break into shards.
Step 4 – Prepare Rose-Saffron Syrup (10 min)
In a small pot, combine 2 tbsp sugar, 2 tbsp water, 1 tbsp rosewater and a few saffron threads. Bring to a gentle simmer, stir until sugar dissolves (2 min). Strain and set aside.
Step 5 – Brûlée Tops (10 min)
Sprinkle 30 g sugar evenly over each custard. Using a kitchen torch, caramelize sugar until crisp and golden (about 2 min). Let rest 2 min to harden.
Step 6 – Garnish and Serve (5 min)
Place 2–3 brittle shards upright on each crème brûlée. Drizzle rose-saffron syrup around edges. Scatter crushed pistachio and rose petals if desired. Serve immediately.
