Cryo-Miso Glazed Black Cod with Smoked Rice Cream, Yuzu-Daikon Ribbon Salad, and Buckwheat Furikake

Glossy miso-glazed black cod on rice cream with yuzu daikon ribbons and buckwheat crunch.

Cryo-Miso Glazed Black Cod with Smoked Rice Cream, Yuzu-Daikon Ribbon Salad, and Buckwheat Furikake

Modern Japanese main course built on regional fish cookery, kōji science, and precision heat control. You get coastal umami, subtle smoke, and the clean finish Japan prizes at dinner. The method leans into cryo-aging and cavitation, two lab-grade tricks pushed by cutting-edge chefs in Tokyo’s back rooms.

Sweet miso caramel meets bright yuzu acid. Balanced salinity from tamari rides alongside soft bitterness in shiso. Buckwheat and bonito fat boost deep, slow umami. Heat stays gentle, more warmth than burn.

Ingredient List (Serve 4 GF)

• Black cod (sablefish) fillets, skin on, 4 × 160 g, pin-boned
• Gluten-free white rice miso, 120 g
• Pure maple syrup, 30 ml
• Tamari (gluten-free soy), 40 ml
• Sake, 20 ml
• Kombu powder, 2 g
• Ice cubes for cryo-age step
• Koshihikari rice, rinsed, 150 g
• Filtered water, 600 ml
• Kombu sheet, 5 cm square
• Cold smoked salt, 4 g
• Rendered bonito fat, 30 ml (from shaved katsuobushi trimmings)
• Daikon radish, 300 g, peeled into long ribbons
• Fresh yuzu juice, 40 ml
• Rice vinegar, 20 ml
• Fine sea salt, 2 g
• Granulated sugar, 5 g
• Toasted buckwheat groats, 40 g
• Black sesame seeds, 10 g
• White sesame seeds, 10 g
• Nori sheet, 1, finely crumbled
• Shiso leaves, 8 large plus a handful of micro shiso
• Lecithin powder, 2 g
• Yuzu zest from 1 fruit

Step-by-Step Instructions

Step 1 – Mise En Place (15 min)
Gather a blast freezer or super-cold chest, blender, pressure cooker, stick blender with aerator tip, fine chinois, and non-stick grill pan. These tools keep temperature tight, textures clean, and service fast.

Step 2 – Cryo-Miso Cure (20 min active, 2 hr passive)
Whisk miso, maple, tamari, sake, and kombu powder. Coat cod, vacuum-seal, and blast-freeze to −30 °C for 30 min. Transfer to fridge 2 hr to thaw slowly. Freezing fractures muscle fibres, letting miso seep deep.

Troubleshoot: If glaze turns gritty, add a spoon of hot water and whisk smooth.

Step 3 – Smoked Rice Cream Base (15 min active, 30 min cook)
Pressure-cook rice, water, kombu sheet, and smoked salt for 25 min. Discard kombu. Blend rice with bonito fat until velvety. Pass through chinois. Keep warm at 60 °C.

Troubleshoot: If too thick, splash warm water; too thin, simmer to tighten.

Step 4 – Cavitated Yuzu Daikon (10 min active, 15 min rest)
Mix yuzu juice, rice vinegar, salt, sugar. Pack daikon ribbons and marinade in a vacuum tumbler or ultrasonic bath for 2 min to drive flavour fast. Rest 15 min.

Troubleshoot: No vac gear? Bag and let sit 1 hr.

Step 5 – Buckwheat Furikake Crunch (5 min active, 12 min bake)
Toss buckwheat, sesame, nori, pinch salt. Bake on tray at 170 °C for 12 min until nutty. Cool.

Step 6 – Tamari Shiso Foam (5 min)
Blend 120 ml warm water, tamari, lecithin, 4 large shiso leaves. Aerate with stick blender until stable foam forms. Hold.

Step 7 – Glaze and Char Cod (10 min)
Heat grill pan medium-high. Wipe excess miso, grill skin side 4 min, flip 2 min, brush with fresh glaze, torch surface for caramel edge. Flesh hits 52 °C internal.

Step 8 – Plate Assembly (5 min)
Ladle rice cream centre. Set cod off-centre on cream. Coil daikon nest beside. Spoon furikake shards around. Crown with shiso foam, micro shiso, yuzu zest.

Cooking Methods

• Cryo-aging miso cure for deep penetration and silkier texture
• Cavitation pickling for one-pass flavour infusion
• Ultra-blended rice cream emulsion using bonito fat for smoky depth

Optional Spice Blends: Yuzu-kosho salt; sansho-pepper dust.
Optional Flavor Boosters: A drop of smoked sesame oil in rice cream; shaved dried yuzu peel in furikake.

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
