Crispy Rice-Leaf Bites with Prawn, Coconut-Lime Espuma and Tamarind Reduction

Thai rice-leaf appetizer with crispy wafer, prawn, coconut espuma and tamarind sauce on slate

Crispy Rice-Leaf Bites with Prawn, Coconut-Lime Espuma and Tamarind Reduction

Bright citrus and herbal top notes meet warm chili and garlic undertones. Sweet palm sugar ripples through a tangy tamarind reduction. Toasted rice powder adds smoky crunch and nutty depth. Fish sauce and shiitake broth layer umami. A hint of galangal oil brings mild bitterness. Texture shifts from crisp wafer to silky coconut-lime espuma. The finish is clean, refreshing and balanced.

Ingredients (Serve 4 GF)

  • 100 g jasmine rice, soaked 8 h, drained
  • 50 ml rice bran oil, divided
  • 8 fresh betel or lettuce leaves, washed, patted dry
  • 200 g raw prawns, peeled, deveined, tails removed
  • 1 clove garlic, minced
  • 1 tbsp fish sauce
  • 1 tsp palm sugar
  • 100 ml shiitake-infused broth (see Mise En Place)
  • 50 ml canned coconut milk, full fat, room temp
  • Zest of 1 lime, thin ribbons reserved
  • Juice of ½ lime
  • 20 g tamarind pulp, soaked 30 min in 50 ml warm water, strained
  • 1 tbsp palm sugar
  • Pinch sea salt
  • 10 g toasted rice powder (see Cooking Methods)
  • Micro-cilantro sprigs and fine chili threads for garnish

Step-by-step Instructions

Step 1 – Mise En Place (15 min)
Gather utensils: nonstick skillet for wafers, small saucepan for reduction, cream whipper for espuma. You need a sous-vide precision cooker and ultrasonic bath to infuse herbs. These tools ensure even temperature and deep flavor extraction.
Prep: soak rice, strain tamarind, zest lime, mix shiitake broth, charge whipper with N₂O.

Step 2 – Make Rice Wafers (30 min)
Heat rice bran oil in nonstick skillet over medium-high. Spread a thin layer (~30 g per wafer) of soaked rice, pressing gently. Cook 2 min until blistered, flip and cook 1 min. Transfer to paper towel. Repeat to make 4 wafers. Troubleshooting: if rice sticks, lower heat or increase oil slightly.

Step 3 – Sous-Vide Prawn Infusion (20 min)
Vacuum-seal prawns with fish sauce, minced garlic and shiitake broth. Cook sous-vide at 55 °C for 15 min. Remove, pat dry, then sear 30 s per side in 1 tbsp hot oil to finish. This locks juice and layers umami.

Step 4 – Tamarind Reduction (12 min)
In a small saucepan, combine tamarind water, palm sugar and salt. Bring to a gentle simmer, reduce to 3 tbsp thick syrup (~10 min). Strain if needed. You look for ribbon-like viscosity. If too thin, simmer 2 min more.

Step 5 – Coconut-Lime Espuma (5 min prep + charge)
Whisk coconut milk, lime juice and a pinch of salt. Strain into cream whipper, charge with N₂O. Chill upright 5 min. The foam should hold soft peaks. If runny, recharge and chill.

Step 6 – Assemble Bites (5 min)
Place each leaf on slate. Top with rice wafer. Lay one prawn piece per wafer. Pipe a dollop of espuma. Drizzle 5 ml tamarind reduction under each bite. Sprinkle toasted rice powder, add micro-cilantro and chili threads, finish with lime zest.

Scalability & Flexibility
Double rice and prawns to serve 8; cook wafers in batches. Foam can rest 1 h in whipper. Swap prawns for thin scallop slices or tofu cubes.

Cooking Methods

  • Flash Fermentation: lightly ferment rice in saline for 2 h before soaking to boost depth.
  • Sous-Vide Precision: ensures prawn texture stays tender.
  • Cream Whipper Espuma: delivers airy foam without stabilizers.
  • Toasted Rice Powder: pan-toast leftover rice, grind to powder for nutty crunch.

Optional Spice Blend

  • 1 tsp roasted white pepper, ½ tsp ground coriander seeds, ¼ tsp galangal powder. Mix into shrimp marinade.

Flavor Boosters

  • 1 tsp yuzu kosho under espuma; extra zing.
  • 1 drop sesame oil on each wafer for aroma.

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
