Tamarind‑Caramel Salmon with Coconut Sweet Potato Mash and Eggplant Ensalada Crunch

Tamarind‑Caramel Salmon with Coconut Kamote Mash and Ensaladang Talong Crunch

Tamarind‑Caramel Salmon with Coconut Sweet Potato Mash and Eggplant Ensalada Crunch

Filipino food mines sour fruit, deep caramel, and coconut fat, then brightens the mix with raw salad crunch. It looks humble but thinks big. Tonight you push that spirit into a 30‑minute lane without losing the barrio soul. No rice, no adobo, no foam—just a sharp tamarind glaze, creamy kamote, grilled eggplant salad, and a cold glass of Aussie white to keep pace.

You meet sweet muscovado first, then quick tamarind sour hits the sides of your tongue. Soy salt lingers. Coconut‑butter kamote cools the edges while grilled eggplant slips in smoke. A late zap of calamansi zest keeps it awake. Everything feels balanced; nothing overstays.

Ingredients (Serves 4 GF)

  • 4 salmon fillets, skin on, 160 g each
  • Quick brine: 500 ml cold water, 15 g sea salt, 1 tsp calamansi zest
  • 400 g orange sweet potato, peeled, 2 cm dice
  • 120 ml coconut milk
  • 1 tbsp coconut oil
  • 1 small red onion, thin rings
  • 1 tbsp roasted peanuts, crushed fine
  • 1 small Asian eggplant, split lengthwise
  • 1 Roma tomato, diced small
  • 1 Lebanese cucumber, diced small
  • 1 tbsp cane vinegar
  • 1 tsp raw sugar
  • 1 tbsp chopped cilantro stems (reserve leaves)
  • Glaze: 60 ml tamarind concentrate, 40 g muscovado sugar, 20 ml gluten‑free tamari, 1 tsp grated ginger

Step‑by‑step Instructions

Step 1 – One‑Song Brine (4 min)
Stir salmon in cold brine, chill three minutes, rinse, pat dry. The dip seasons and firms the flesh fast. If edges turn opaque, cut the brine time next round.

Step 2 – Sweet Potato Mash (12 min)
Boil sweet‑potato cubes in salted water eight minutes until knife‑tender. Drain, mash with coconut milk and a pinch pepper. Keep warm. Watery mash means over‑boil; steam off extra moisture.

Step 3 – Shallot‑Peanut Crunch (3 min)
Heat coconut oil in small pan. Fry onion rings two minutes until crisp. Toss hot rings with crushed peanuts and a pinch salt. If rings burn, lower heat; they finish quick.

Step 4 – Grill the Eggplant (4 min)
Set grill pan high. Char eggplant halves cut‑side down two minutes, flip one minute. Dice charred flesh, mix with tomato, cucumber, vinegar, sugar, cilantro stems. Season. Soggy salad? Grill pan wasn’t hot enough.

Step 5 – Glaze Build (3 min)
Whisk tamarind, muscovado, tamari, ginger in small pot. Simmer two minutes until syrupy. If too thick, splash water.

Step 6 – Salmon Sear & Finish (4 min)
Wipe grill pan, high heat. Oil lightly. Press salmon skin down three minutes until skin crackles. Flip thirty seconds; brush thick coat of glaze, let bubble ten seconds. Overcook and it dries; pull early, rest one minute.

Step 7 – Plate (2 min)
Swoop sweet potato mash onto warm plates. Set glazed salmon on top. Spoon eggplant salad to the side. Scatter shallot‑peanut crunch. Dust with cilantro leaves and fresh calamansi zest. Serve hot.

Cooking Methods

  • One‑Song Brine: Three‑minute saline soak seasons fish in the time it takes to play a track.
  • Char‑and‑Dice Eggplant: Quick grill sear adds smoke without long oven time.

Optional spice blend: pinch toasted annatto, black pepper, and bay leaf powder into the glaze for deeper red tone.
Flavor boosters: extra drizzle of fish sauce at table, fresh chili slices for heat seekers.

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
