Porchetta-Style Pork Loin with Parmesan Polenta, Charred Radicchio & Salsa Verde
Italian cuisine lives in simplicity: high-quality ingredients, clear techniques and bold flavour. Think olive oil that tastes of sun, tomatoes picked at peak, herbs young and green, cheese aged just so. It honors terroir and tradition—slow-roasted meats, hand-stirred polenta, fresh pasta. This dish draws on that spirit: pork loin rubbed with rosemary and garlic, rolled tight like porchetta, roasted until skin crackles. It sits atop creamy Parmesan polenta and shares the plate with charred radicchio and salsa verde. Every bite feels rooted in the land and crafted by hands that know their craft.
First, you taste golden pork fat and crisp skin—rich, savory and warming. Next layer: herb-studded meat offers garlicky, rosemary notes. Creamy polenta brings gentle sweetness and umami from Parmesan. Charred radicchio adds bitter contrast. Salsa verde cuts through with bright parsley, caper tang and lemon lift. Texture shifts from crackling skin to silky polenta and tender leaves. The progression moves from hearty richness to green freshness. Flavours balance: bold meatosity tempered by vegetables, acidity and dairy comfort.
Ingredients (Serves 4 GF)
- 1.2 kg boneless pork loin, rind scored
- 5 g sea salt
- 2 g freshly ground black pepper
- 15 ml extra-virgin olive oil
- 4 garlic cloves, minced
- 1 sprig fresh rosemary, leaves chopped (≈ 10 g)
- 1 tsp dried fennel seed, crushed (2 g)
- 500 ml water
- 200 g cornmeal (polenta), coarse
- 50 g grated Parmesan, plus extra for shaving
- 30 g unsalted butter, cubed, chilled
- 250 g radicchio, quartered
- 15 ml olive oil (for radicchio)
- Salsa Verde:
- 20 g flat-leaf parsley leaves
- 10 g fresh mint leaves
- 1 tbsp capers, rinsed (10 g)
- 1 garlic clove
- Zest and juice of ½ lemon
- 60 ml extra-virgin olive oil
- Pinch of salt and pepper
Step-by-step Instructions
Step 1 – Prep and Season Meat (10 min)
Score rind with a sharp knife. Pat pork dry. Rub all over with salt and pepper. Mix garlic, rosemary and fennel seed with oil. Massage into meat. Let rest 10 min at room temperature.
Step 2 – Preheat Oven and Sear (10 min)
Preheat oven to 180 °C. Heat a roasting pan on stove until smoking. Place pork rind-side down. Sear 3 min until golden. Flip and sear 2 min. This builds flavour and texture.
Step 3 – Roast Porchetta (60 min)
Move pan to oven. Roast 50 min for medium (internal 62 °C). If you prefer medium-well, roast to 68 °C. Skin will crisp. Rest meat 10 min on a cutting board.
Step 4 – Make Parmesan Polenta (20 min, overlap Step 3)
Bring water and a pinch of salt to a boil. Slowly whisk in polenta. Reduce heat to low. Stir constantly 6–8 min until thick. Off heat, stir in butter and Parmesan. Cover and keep warm.
Step 5 – Char Radicchio (5 min, during final roast)
Toss radicchio with oil and a pinch of salt. Heat a grill pan or skillet on high. Char wedges 1–2 min per side until edges blacken. Remove.
Step 6 – Blend Salsa Verde (5 min)
In a mortar or blender, combine parsley, mint, capers, garlic, lemon zest and juice. Add oil slowly while crushing or blending to a loose sauce. Season to taste.
Step 7 – Plate and Serve (5 min)
Spoon polenta on each plate. Arrange sliced porchetta against it. Lay charred radicchio wedges alongside. Drizzle salsa verde over meat and polenta. Shave extra Parmesan on top. Garnish with a few parsley leaves.
Total time: 110 min
Scalability: Halve for two; double roast time if batch-roasting two loins.
Cooking Methods
