Smoked Wagyu Short Ribs with Wattleseed-Honey Glaze, Macadamia Mash & Silverbeet Sauté

Wagyu short ribs glazed with honey and wattleseed, served with creamy macadamia mash and bright green silverbeet

Smoked Wagyu Short Ribs with Wattleseed-Honey Glaze, Macadamia Mash & Silverbeet Sauté

Umami-rich beef hits with deep savory satisfaction. Sweet honey and creamy macadamia balance the meat’s heft. A peppery bite from wattleseed follows. Bright citrus notes from lemon myrtle oil cut through the richness. Bitter silverbeet adds grounding contrast. Texture shifts from tender ribs to chunky nut mash and crisp greens. The progression thrills: starts bold, moves to herbal layers, ends bright and clean. Flavours stay balanced and punchy without overload. Each note earns its place and pulls you back for more.

Australian cooking mixes bold native ingredients with humble comfort classics. It draws on sun-ripened produce, coastal seafood and pasture-raised meats. Ancient flavours like wattleseed and lemon myrtle sit alongside pantry staples. This dish leans into that heritage: rich Wagyu beef short ribs meet honey and wattleseed glaze. Silverbeet adds green bitterness. Toasted macadamias bring crunch. Every element nods to place and memory. It feels at home in an outback pub and a city bistro. You taste sunbaked earth, a hint of smoke, bright citrus lift. It is warm, wild and rooted in modern Australia.

Ingredients (Serves 4 GF)

  • 4 Wagyu short ribs (250 g each), bone-in, room temperature
  • 30 ml extra-virgin olive oil
  • 2 tbsp runny honey
  • 1 tbsp ground wattleseed
  • 3 garlic cloves, finely sliced
  • 1 tbsp Dijon mustard
  • 1 sprig fresh rosemary, leaves picked
  • 1 kg Yukon Gold potatoes, peeled, cut into 3 cm cubes
  • 200 ml whole milk, warmed
  • 50 g raw macadamias, toasted, roughly chopped
  • 20 g unsalted butter, chilled, cubed
  • 200 g silverbeet leaves, stems removed, cut into 5 mm ribbons
  • 10 ml olive oil
  • 2 tbsp unsalted butter
  • Sea salt and freshly ground black pepper

Step-by-step Instructions

Step 1 – Mise en Place (15 min)
Arrange smoker or heavy skillet, roasting tray, saucepan, sauté pan and potato masher. Warm milk. Toast macadamias. Pick rosemary. Why: smoker or skillet adds aroma. Sauté pan keeps greens bright.

Step 2 – Season & Glaze Ribs (10 min)
Pat ribs dry. Rub with olive oil. Spread Dijon mustard on both sides. Layer garlic, rosemary leaves, honey and wattleseed. Season with salt and pepper. Rest 10 min to let seasoning adhere.

Step 3 – Smoke or Sear (20 min)
If you have smoker, smoke ribs at 120 °C for 15 min. Otherwise heat skillet until smoking. Sear each side 2 min. Transfer ribs to roasting tray.

Step 4 – Roast with Glaze (25 min)
Preheat oven to 160 °C. Roast ribs for 20 min, basting with pan juices halfway. Aim for 58 °C internal for medium-rare, or 62 °C for medium.

Step 5 – Make Macadamia Mash (20 min)
Boil potatoes in salted water until tender (12 min). Drain and return to pan. Mash with warm milk and chilled butter until smooth. Fold in toasted macadamias. Season to taste.

Step 6 – Sauté Silverbeet (5 min)
Heat olive oil and butter in sauté pan over medium. Add silverbeet ribbons. Toss 1–2 min until just wilted. Season with salt and pepper.

Step 7 – Rest & Plate (5 min)
Rest ribs on a rack for 5 min. Spoon mash center-plate. Lean ribs against mash. Spoon glaze over ribs and around mash. Arrange silverbeet. Serve immediately.

Cooking Methods

  • Ultrasonic marination is removed to keep it simple. Instead we rely on cold smoking or high-heat searing for depth rather than foam.
  • Honey-wattleseed glaze balances sweet and earthy.
  • Cold smoke infusion uses native wood chips for aroma.

Optional Spice Blend

  • 1 tsp ground Tasmanian pepperberry
  • ½ tsp dried lemon myrtle

Optional Flavor Boosters

  • Drizzle aged balsamic reduction over mash
  • Scatter crispy garlic chips on ribs

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
