Pan-Seared Lamb Cutlets with Minted Pea Purée, Rosemary Potato Wedges & Red Wine Jus

British cuisine thrives on rooted flavors: grass-fed lamb, sharp horseradish, earthy root vegetables. It balances hearty comfort with bright herbs. Techniques include pan-searing, slow roasting and jus reductions. This dish merges classic roast lamb cutlets, minted pea purée, rosemary potatoes and a robust red wine jus. It honors Sunday roast tradition while streamlining for a weeknight dinner. Fresh mint, garlic and thyme lift the richness. The result feels both timeless and immediate—sturdy, balanced and unmistakably British.

Dominant savory lamb and thyme notes lead. Secondary mint and garlic bring fresh lift. Potatoes add rosemary-infused comfort. Jus delivers deep umami and red-fruit acidity. Texture shifts from tender cutlet to creamy purée and crisp potato edges. It starts meaty, moves herbal, finishes clean with jus brightness.

Ingredients (Serves 4 GF)

  • 8 lamb cutlets (approx. 800 g total), Frenched, trimmed to 2 cm fat cap
  • 500 g fresh or frozen peas, blanched
  • 10 g fresh mint leaves, chopped
  • 1 garlic clove, peeled
  • 50 ml olive oil, divided
  • 600 g baby potatoes, quartered
  • 2 sprigs fresh rosemary, needles stripped
  • 30 g unsalted butter, cold, cubed
  • 1 small shallot (40 g), finely chopped
  • 200 ml Australian Shiraz (e.g., Penfolds Bin 28 Kalimna Shiraz 2018)
  • 200 ml gluten-free beef stock, hot
  • 1 tsp Dijon mustard
  • 1 tsp red wine vinegar
  • 2 g fine sea salt, plus extra to finish
  • 1 g cracked black pepper, plus extra to finish
  • Chives, finely sliced, for garnish

Step-by-Step Instructions

Step 1 – Mise En Place (10 min)
Gather heavy skillet, baking tray, blender, small saucepan. Season lamb, chop herbs, peel garlic. Clean potatoes, preheat oven to 200 °C. Tools ensure smooth workflow when lamb cooks quickly.

Step 2 – Roast Potato Wedges (30 min)
Toss potatoes with 20 ml oil, rosemary and 1 g salt. Spread on tray. Roast 25–30 min until crisp edges and tender center. Troubleshooting: if potatoes burn, reduce heat to 190 °C.

Step 3 – Minted Pea Purée (10 min)
Blend peas, mint, garlic, 20 ml oil and 2 g salt until smooth. Add 1–2 tbsp water if too thick. Keep warm or refrigerate briefly; reheat gently. Check texture: should hold shape in swirl.

Step 4 – Pan-Sear Lamb Cutlets (10 min)
Heat skillet over medium-high. Add 10 ml oil. Sear cutlets fat-side down first for 2 min until golden. Flip; cook 1.5 min for medium-rare or longer per preference. Rest on wire rack 5 min. Troubleshooting: if skillet smokes, lower heat.

Step 5 – Red Wine Jus (15 min)
In saucepan over medium, melt butter. Sauté shallot 2 min until translucent. Add mustard; stir 30 sec. Pour wine; reduce by half (5–7 min). Add stock and vinegar; simmer 5 min. Strain into small jug. Taste; adjust salt and pepper.

Step 6 – Plate and Serve (5 min)
On each plate, spoon pea purée in circle. Arrange 2 cutlets atop. Fan 150 g potato wedges alongside. Drizzle jus around and over lamb. Sprinkle chives and crack black pepper. Serve immediately.

Scalability: Double ingredients for 8. Purée and potatoes reheatable; jus best fresh.

Cooking Methods

Special Techniques

  • High-heat pan-sear locks juices and creates crisp crust on lamb.
  • Reduction jus: simmering wine before stock concentrates flavor.

Optional Spice Blend

  • Mix 1 g ground coriander and 1 g fennel seed into potato toss for subtle warmth.

Flavor Boosters

  • Stir 5 ml truffle oil into pea purée for earthiness.
  • Add 1 tsp horseradish to jus for sharp contrast.

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
