Wok-Fired Tamarind-Holy Basil Chicken with Coconut-Lime Rice and Crunchy Snake Beans

Glossy tamarind chicken over coconut-lime rice with holy basil and peanuts.

Wok-Fired Tamarind-Holy Basil Chicken with Coconut-Lime Rice and Crunchy Snake Beans

Fast-lane Thai for weeknight survival—think mortar-pounded aromatics, big-flavor wok work, and the sweet-sour electricity only tamarind and palm sugar can spark. We keep the chaos to 30 minutes, lean on rice for ballast, and let holy basil scream over the top. No shortcuts on taste, zero gluten in sight.

Sour tamarind hits first, followed by palm-sugar caramel that soothes without cloying. Fish-sauce salt rides shotgun. Chili throws a clean, focused burn. Holy basil finishes with mint-anise perfume while coconut rice adds mellow cream.

Ingredient List (Serve 4 GF)

• Boneless skinless chicken thighs, 600 g, thin strips
• Fine sea salt, 2 g
• White pepper, 1 g
• Jasmine rice, rinsed, 300 g
• Coconut milk, 250 ml (full-fat)
• Water, 250 ml
• Kaffir-lime leaf, 1, torn
• Toasted peanuts, roughly crushed, 40 g
• Fried shallots, 20 g
• Snake beans (or green beans), 200 g, 3 cm pieces
• Neutral oil, 30 ml
• Garlic cloves, 3, smashed
• Bird’s-eye chilies, 2, sliced
• Tamarind concentrate, 40 g
• Palm sugar, grated, 45 g
• Gluten-free fish sauce, 40 ml
• Fresh lime juice, 30 ml
• Holy basil leaves, 20 g
• Lime zest, from 1 lime

Step-by-Step Instructions

Step 1 – Mise En Place (5 min)
Set rice cooker, 30 cm wok, microplane, and heat-proof spatula. Rice cooker frees hands; a seasoned wok gives instant sear; microplane lifts lime oils on demand.

Step 2 – Coconut-Lime Rice (1 min active, 18 min cook)
Combine rice, coconut milk, water, kaffir leaf, pinch salt in cooker. Hit start. It’ll finish as the stir-fry lands.

Step 3 – Speed Sauce Base (2 min)
Whisk tamarind, palm sugar, fish sauce, lime juice until sugar dissolves. Ready on the side.

Step 4 – Chicken Sear (4 min)
Toss chicken with salt and pepper. Heat wok high, swirl oil, drop chicken in one layer. Leave 90 seconds for hard char before tossing. Edges should spot caramel-brown.

Step 5 – Aromatic Flash (1 min)
Add garlic and chilies. Stir until fragrant—about 30 seconds—no burn.

Step 6 – Snake-Bean Blister (2 min)
Throw beans in, keep them bright and crunchy with quick tosses.

Step 7 – Caramel Finish (3 min)
Pour sauce. It foams, thickens, and lacquers chicken. Stir until glossy and just syrupy.

Step 8 – Plate & Garnish (2 min)
Scoop coconut rice into bowls. Top with chicken mix. Shower peanuts and fried shallots. Tear holy basil over, micro-zest lime, serve hot.

Troubleshooting

• Sauce too tight? Splash water, stir.
• Rice still wet? Lid off, 2 min rest.
• Basil blackening? Add off heat.

Cooking Methods

• High-heat wok sear for Maillard speed.
• One-pot coconut rice—fat locks in aroma.
• Quick tamarind caramel built in pan, no separate pot.

Optional spice blend: Toasted coriander seed, white pepper, and dried lime leaf powder for extra citrus hit.
Optional flavor booster: Drizzle garlic-infused fish sauce at table.

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
