Tamarind-Glazed Malaysian Chicken Thighs with Avocado-Coconut Purée

Golden-brown chicken thigh, glossy with tamarind glaze, sits atop pale green avocado-coconut puree streaked across a white plate. Charred red chilli rings and bright green lime leaf threads crown the meat.

Tamarind-Glazed Malaysian Chicken Thighs with Avocado-Coconut Purée

Malaysian cuisine blends Malay, Chinese, Indian and indigenous traditions into vibrant, aromatic dishes. You’ll find bold spice pastes built on fresh aromatics—lemongrass, galangal, turmeric—balanced by coconut milk’s creaminess and tamarind’s bright acidity. Street stalls offer kaya toast and char kway teow; hawker centres serve nasi lemak and laksa. Layers of flavor come from wok-charred heat, slow-cooked rendangs, and quick-pickled sambals. Textures range from silky coconut custard to crunchy kerisik (toasted coconut). This recipe honors that heritage with unexpected modern techniques—rapid-infused oils, nitro-chilled coconut foam—and retains rice-centric harmony.

Flavour Profile

Sweet-spicy coconut floats first, cut by sharp tamarind tang. Secondary notes of fresh turmeric and galangal add warmth, with a whisper of smoky char. Creamy avocado puree softens chili heat, while crispy shallot cracklings deliver crunch. The finish is bright—lime leaf aroma lingers, balancing richness. Intensity builds gently, peaks at mid-bite heat, cleanses with acidity. Flavors stay well-balanced: cream, spice, acid, texture in sync.

Ingredient List (Serving 4 GF)

• 8 bone-in, skin-on chicken thighs (approx. 150 g each), patted dry, room temperature
• 1 tbsp fine sea salt
• 1 tsp white pepper powder
• 2 tbsp neutral oil (rice bran or grapeseed), divided
• 100 ml tamarind water (30 g tamarind paste steeped in 100 ml warm water, strained)
• 100 ml coconut cream, room temperature
• 2 tbsp palm sugar, finely chopped
• 1 stalk lemongrass (white part only), smashed and sliced
• 2 cm piece galangal, peeled and thinly sliced
• 2 bird’s eye chilies, halved lengthwise
• 3 cloves garlic, minced
• 1 shallot, minced
• 1 small green chilli, thin rings, for garnish
• 1 small red chilli, thin rings, for garnish
• 1 ripe avocado, flesh scooped, room temperature
• 50 ml coconut water
• Juice of 1 lime
• Zest of ½ kaffir lime leaf, shredded
• 2 spring onions, finely sliced
• Rice bran oil, for crisping
• 2 shallots, thinly sliced, for cracklings
• Micro-cucumber ribbons (2 cucumbers, peeled into ribbons)

Step-by-step Instructions

Step 1 – Mise en Place (10 min)
Gather tools: heavy skillet for searing (ensures even color), small saucepan for glaze, blender for purée, wire rack and baking sheet for chicken rest, fine mesh strainer. These speed workflow and maintain texture.

Step 2 – Prep Chicken (5 min)
Season thighs with salt and white pepper. Let rest while you start purée.

Step 3 – Avocado-Coconut Purée (5 min)
Blend avocado, coconut water, lime juice until smooth. Adjust with a splash more water if too thick. Keep cool in bowl.

Step 4 – Crispy Shallot Cracklings (10 min, simultaneous)
Heat 2 cm oil in small pan over medium. Fry shallot slices until deep golden (2–3 min), stir constantly. Drain on paper towel. Reserve oil.

Troubleshoot: if oil smokes, lower heat; if cracklings burn, use a slotted spoon immediately.

Step 5 – Chicken Sear (12 min)
Preheat skillet over medium-high. Add 1 tbsp oil. Sear thighs skin-side down without moving until golden-brown and crisp (6 min). Flip, cook 3 min. Transfer to wire rack.

Step 6 – Tamarind-Coconut Glaze (8 min)
In saucepan, warm remaining oil. Sauté garlic, shallot, lemongrass, galangal until fragrant (1 min). Add tamarind water, coconut cream, palm sugar. Simmer until sauce thickens and coats spoon (5 min). Strain to remove solids, return to pan.

Troubleshoot: if sauce splits, whisk in a teaspoon of cold coconut cream off heat.

Step 7 – Finish Chicken (6 min)
Brush thighs with glaze. Return to skillet, medium heat. Cook thighs in glaze, turning once, until internal temp hits 74 °C (3 min per side). Remove and rest 5 min.

Step 8 – Plate (5 min)
Spoon puree in swoosh across plate. Place thigh atop. Drizzle extra glaze. Scatter cucumber ribbons, cracklings, chilli rings. Finish with kaffir lime zest and spring onion.

Total time: 61 min (prep 20 min, cook 41 min).

Cooking Methods

• Rapid tamarind infusion—extracts bright acidity without cooking fruit long.
• Wok-char technique—high heat sear locks juices.
• Nitro-style chill (optional)—freeze avocado purée edges for texture contrast.

Optional Spice Blends & Boosters

• Extra depth: 1 tsp kerisik (toasted coconut powder) whisked into glaze.
• Heat booster: ½ tsp bird’s eye chilli oil stirred in.

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
