Sous-Vide Piri-Piri Chicken with Arroz Meloso de Tomate and Charred Piri-Piri Peppers

Sous-Vide Piri-Piri Chicken with Arroz Meloso de Tomate and Charred Piri-Piri Peppers

Dominant salty-umami backbone from piri-piri-infused chicken and tomato rice. Bright acidity from fresh tomatoes and white wine vinegar. Subtle sweetness from slow-roasted tomatoes and caramelized onions. Gentle bitterness from charred peppers. Rich umami depth from smoked paprika and garlic oil. Starts with warm garlic and spice, builds to tomato-sweetness, finishes clean with a touch of citrus heat. Balance feels robust yet lively—a midday dish that keeps you alert and satisfied.

Ingredients (Serves 4 GF):

  • 4 chicken breasts (skin-on, bone-in, 180 g each), at room temperature
  • 100 ml extra-virgin olive oil
  • 10 g smoked paprika
  • 4 cloves garlic, thinly sliced
  • 2 tbsp white wine vinegar
  • 4 fresh piri-piri peppers (mixed red and green), whole
  • 300 g arborio rice, rinsed
  • 500 ml homemade tomato broth (see note below)
  • 200 g ripe plum tomatoes, quartered
  • 1 small yellow onion, finely diced
  • 30 g unsalted butter, cubed, chilled
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • Zest of 1 lemon
  • 15 g fresh parsley, chopped
  • 10 g micro-cilantro for garnish

Tomato Broth (house-made, gluten-free):

  • 1 kg fresh tomatoes, roughly chopped
  • 1 L water
  • 1 small bay leaf
  • 1 garlic clove, smashed
  • Pinch sea salt

STEP-BY-STEP INSTRUCTIONS:

Step 1 – Mise En Place (15 min)
Gather tools: sous-vide circulator, vacuum bags, heavy saucepan, sauté pan, slotted spoon, fine sieve, mixing bowls. Sous-vide ensures precise doneness for chicken. Heavy pan for even rice cooking. Prepare ingredients: slice garlic, dice onion, rinse rice, quarter tomatoes, zest lemon.

Step 2 – Infuse Oil (10 min)
Warm olive oil and garlic in a small saucepan over low heat until garlic just sizzles. Remove from heat. Stir in smoked paprika and white wine vinegar. Let cool, then strain into a bowl.

Troubleshoot: If garlic browns too fast, lower heat. Oil should smell garlicky, not burnt.

Step 3 – Sous-Vide Chicken (1 hr 30 min)
Season chicken with salt, pepper, and half the infused oil. Place in vacuum bags with a whole piri-piri pepper. Seal and sous-vide at 63 °C for 1 hr 30 min.

Troubleshoot: Ensure full seal. If bag floats, add weight or reduce air.

Step 4 – Char and Roast (15 min)
Preheat grill pan to high. Remove chicken from bag; reserve juices. Char peppers until black spots form. Grill chicken skin-side down until golden and crisp (2–3 min). Rest on rack.

Troubleshoot: If skin sticks, brush pan with oil.

Step 5 – Prepare Tomato Broth (20 min simultaneous)
Combine broth ingredients in saucepan and simmer 15 min. Strain through fine sieve, pressing solids to extract flavor. Return liquid and reserved chicken juices to pan.

Step 6 – Cook Arroz Meloso de Tomate (25 min)
In a heavy saucepan over medium heat, melt half the butter. Sauté onion until translucent. Add arborio rice; stir to coat. Pour in 200 ml tomato broth; stir until nearly absorbed. Add remaining broth in thirds, stirring after each addition, until rice is creamy yet al dente. Fold in quartered tomatoes, lemon zest, remaining butter, and a drizzle of infused oil. Season to taste.

Troubleshoot: If rice sticks, add a splash of water. Rice should be loose, not dry.

Step 7 – Plate and Finish (5 min)
Spoon rice onto each plate. Slice chicken breast and fan over rice. Arrange charred peppers alongside. Drizzle extra infused oil. Sprinkle parsley and micro-cilantro. Serve immediately.

Troubleshoot: Keep timing so rice stays warm.

Total time: 2 hr 10 min (active 1 hr)

COOKING METHODS:

  • Sous-Vide Precision Poaching
  • Rapid Fumigation: smoked paprika oil infusion
  • Meloso Rice Technique: gradual broth absorption

Optional Spice Blend: 1 tsp smoked paprika, ½ tsp crushed red pepper, ½ tsp garlic powder.
Optional Flavor Boosters: 1 tsp fish sauce in rice for extra umami; finishing splash of sherry vinegar.

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
