I was ten when I first stood at a stove in Pampanga. My grandma and mum didn’t ask if I wanted to cook — they told me. In our house, food wasn’t casual. Pampanga is the culinary capital of the Philippines, and the standard is ruthless. Too salty, too bland, too rushed — you heard about it. That’s where I learned discipline: under their eyes, with garlic frying in the pan and vinegar stinging the air, knowing that every plate carried weight. Those lessons still shape me today as a Filipino Chef in Australia, carrying Kapampangan discipline into every dish I create.
By the time I finished high school in 1989, I knew I wanted to be a chef. But we were poor, and culinary school was out of reach.
So I built another life. For three decades, I climbed through the consulting industry — from Big 4 firms to boutique consultancies. I learned frameworks, processes, and the discipline to see problems others miss. I learned how to listen, how to deliver, and how to keep promises.
That maturity now shapes me not only as a Filipino Chef in Australia, but also as a culinary consultant who brings structure and practicality into kitchens.
In January 2024, I finally walked into culinary school. I wasn’t the youngest in the room — but I was the hungriest. Every cut, every burn, every 4 a.m. prep wasn’t just training. It was thirty years of waiting catching fire all at once.
By July 2025, I graduated. Scarred knuckles, sharpened knives, and a vision that survived three decades in the dark. Not the best, not the brightest — but relentless.
Now I bring both worlds into the kitchen: the creativity of a Culinary R&D specialist, and the discipline of a consultant who knows how to deliver results.
My mission as a Filipino Chef in Australia is to put Filipino food on the map — not as novelty, not as “fusion,” but as modern Kapampangan cooking.
Food that can stand shoulder to shoulder with French or Italian. Food that carries the same discipline my grandma demanded when I was ten.
Because food isn’t just about seasoning. It’s about memory, identity, and story.
When you work with me, you don’t just get recipes. You get another set of eyes on your operation — someone who blends the soul of a Filipino Chef in Australia with the maturity of a consultant.
Every dish is built to carry story and emotion, but also to survive the grind of service, costings, and consistency.
It’s the marriage of art and framework. Emotion and execution.
If you want food that’s just fine, you don’t need me.
If you want dishes that cut through sameness, carry weight, and make people talk about your restaurant long after the bill is paid — I’d love to hear from you.
